Mixed Vegetable Paneer (Dry)

Mixed Vegetable Paneer goes well with chapathi, dosa, and most importantly curd rice :) This will be a treat for non-masala lovers, no garlic or garam masala added in this dish. Onion and saunf  are also optional.  I love to eat curd rice with this dish. It tastes awesome!! But nothing can match curd rice and vadu manga. Sluuurrrrrrpppp!! Anyways, in this dish you can add all kind of english vegetables like beans, carrot, cauliflower, capsicum, peas, etc.. Ok now for the recipe

Preparation time : 20 mins
Ingredients:
Paneer - 250 gms

Onion - 1 medium sized
Carrot - 1 medium sized
Potato - 1 medium sized
Tomato (sour) - 1 Large sized
Capsicum
Yellow - 1 medium sized
Green - 1 medium sized
Saunf - 1tsp
Cumin seeds - 2 tsp
Coriander seeds - 1 tsp (Grind this with red chillis)
Mustard powder - a pinch
Red chillies - 5 (Grind this)
Salt to taste
Coriander leaves - To garnish
Oil - 5tsp




Method:
Paneer
1) If frozen, keep it in luke warm water for 30 mins
2) Dry it and shallow fry until golden brown
3) Add the fried paneer to luke warm water to make it soft.





4) In a pan, add oil (oil used for paneer), then add saunf and jeera.

5) Add onions and fry till golden brown. Add capsicum and fry for 2 mins.


6) Add carrot and potato, fry for 3 mins. Then add tomato.


7) Now add little water, salt and close the lid so that the vegetables get cooked. Stir occasionally.
8) After 7-8 mins, vegetables will be cooked. To this add the paneer and mix well.
Veggies cooked
Add paneer and mix well.
 9) To this add the grinded chilli flakes and coriander powder. Let this fry for 2-3 mins. Garnish with coriander leaves.




Serve with chapathis
