Kathrikkai (Brinjal) kutta kuzhambhu!!

In this blog I will be posting recipes.

My first recipe in this blog - கத்தரிக்காய் (brinjal) kutta kuzhambhu.

This is almost like vetha kuzhambhu, excerpt for few extra ingredients.


Ingredients:


- Brinjal 5-6 cut into small pieces (brinjals to be kept in water, to avoid the color change)
- 1 medium sized tomato (grinded)
- 1 1/2 tsp of tamarind paste or one lemon sized tamarind.
- 4 tsp coconut scraped.
- 3 tsp (heaped) sambar podi
- 1 tsp coriander powder
- small piece of hing or 1/2 tsp hing powder
- reqd qty salt


For seasoning:
- 5 tsps Gingelly oil (நல்லெண்ணெய்)
- 1/2 tsp mustard seeds, 1/2 tsp fenugreek (வெந்தயம்)
- 1 red chilli, curry leaves.

Method
1. In a kadai, add 1 tsp oil and fry the coconut scrapings till it turnd brownish-red. Keep it aside
2. In a heavy bottomed kadai (இலுப்ப சட்டி), add 4 tsps oil and add all the seasoning ingredients. 
3. Now add the sambar podi and coriander powder, fry till raw smell goes off. Don't let it burn. This step is very important to get the real flavor of this kuzhambhu.
4. Add the brinjal and fry well for 2-3 mins.
5. Add tamarind paste, grinded tomato juice and salt. Allow this to boil for 10-15 mins.




 6. Finally add fried coconut and let it boil for 2-3 mins.



Kuzhambhu Ready!!
