Chole (Channa Masala)

Chole or Channa Masala goes very well with Poori. Quick and easy to prepare.

Recipe
Soak channa overnight and pressure cook by adding 1tsp of salt (3 long whistles)

Coriander leaves (garnish), grind-ed ginger - 2tsp, 2 green chillies, 3 medium tomatoes pureed and 1 small onion.

Jeera - 1 tsp. Powders: Chilli - 1.5 tsp, Turmeric - 1/2 tsp, Coriander - 1tsp and Garam masala - 1tsp
Add 2tsp oil and add the jeera. Wait for it to splutter

Add the chopped green chillies, ginger paste and fry well. I've also added 2tsp besan powder for thick consistency which I saw in a website.   

Add the tomato puree and mix well

Add corainder powder and chilli powder.

Sorry for the change of stove, suddenly I ran out of gas in the cylinder so had to induction cook.
Now fry the mixture by adding 1 tbsp butter. Wait until the oil seperates from the mixture.

Add the cooked channa and mix well

Add the garam masala and mix.

Let this cook for 5 mins, until the mixture becomes thick.

Add the chopped onions and garnish with coriander leaves. Lemon juice (optional)
Chole ready!!

Palkhova which tastes exactly like our favorite "Aavin Palkhova" !!

You can never make out the difference between this Palkhova and Aavin Palkhova. I always visit Aavin store for their yummy Palkhova whenever I make a trip to Chennai. But I am so glad that we can prepare Palkhova of that same taste at home. I made this palkhova for my mom.

Palkhova - a microwave oven recipe. All you have to do is mix all the ingredients and microwave it.

Preparation Time: 25 mins                                                
Ingredients:
Sweetened condensed milk - 350 gm
Cream - 150 gm
Milk powder - 10 tbsp
Yoghurt - 6 tbsp
Ghee - 1 tbsp

You can also substitute all the above ingredients with LOW FAT. Since I made this for my mom I used all FULL FAT ingredients.

Method:
Mix all the above ingredients and microwave high for 10 mins, in between you need to stir. Keep an eye on the mixture. You will see the mixture getting thick. From this point, microwave in medium temp for 10 mins, every 3 mins keep stirring. Also the time for making this dish depends on the power of your microwave. For me it took 24 mins exactly. You will see that mixture getting thick and turns to light reddish brown color. Palkhova ready!!

Hope you loved the recipe. You can refrigerate both the chutneys upto 1 week. All you have to do is cut veggies, add bhujia, puffed rice and chutneys. Bhel puri ready.

Mixed Vegetable Paneer (Dry)

Mixed Vegetable Paneer goes well with chapathi, dosa, and most importantly curd rice :) This will be a treat for non-masala lovers, no garlic or garam masala added in this dish. Onion and saunf  are also optional.  I love to eat curd rice with this dish. It tastes awesome!! But nothing can match curd rice and vadu manga. Sluuurrrrrrpppp!! Anyways, in this dish you can add all kind of english vegetables like beans, carrot, cauliflower, capsicum, peas, etc.. Ok now for the recipe

Preparation time : 20 mins
Ingredients:
Paneer - 250 gms

Onion - 1 medium sized
Carrot - 1 medium sized
Potato - 1 medium sized
Tomato (sour) - 1 Large sized
Capsicum
Yellow - 1 medium sized
Green - 1 medium sized
Saunf - 1tsp
Cumin seeds - 2 tsp
Coriander seeds - 1 tsp (Grind this with red chillis)
Mustard powder - a pinch
Red chillies - 5 (Grind this)
Salt to taste
Coriander leaves - To garnish
Oil - 5tsp




Method:
Paneer
1) If frozen, keep it in luke warm water for 30 mins
2) Dry it and shallow fry until golden brown
3) Add the fried paneer to luke warm water to make it soft.





4) In a pan, add oil (oil used for paneer), then add saunf and jeera.

5) Add onions and fry till golden brown. Add capsicum and fry for 2 mins.


6) Add carrot and potato, fry for 3 mins. Then add tomato.


7) Now add little water, salt and close the lid so that the vegetables get cooked. Stir occasionally.
8) After 7-8 mins, vegetables will be cooked. To this add the paneer and mix well.
Veggies cooked
Add paneer and mix well.
 9) To this add the grinded chilli flakes and coriander powder. Let this fry for 2-3 mins. Garnish with coriander leaves.




Serve with chapathis

Thalir vadam!!

Its been a longgggg time since I blogged.. Enjoying with my mom and also her delicious recipes..
Below recipe is one of my favorites.. Thalir vadam (தளிர் வடாம்).. Very traditional.. This is usually deep fried in after it gets dried up.. Now instead of drying it, we will be cooking in steam and consume immediately.. Slurrrrrrppp.. Mouth watering..

Ingredients:
- 1 cup raw rice (cup - ஆழாக்கு)
- 10 medium sized green chillies      (Note: 10 nos for spicy lovers)
- 2 medium sized lime (lime- indian lemon)
- 2 tsp Cumin seeds (சீரகம்)
- 4 tsp gingelly oil (நல்லேன்னய்)
- Salt to taste

Method:
1. Soak rice for 3-4 hrs. 
2. Grind the rice along with green chillies. Fine paste consistency.
3. Add oil, jeera, salt and water. Mix well and it should be of thin consistency like rava dosa batter. 


4. Pour one small cup (கரண்டி) of batter to aluminium plate (ONLY) and spread the same by just rotating the plate.
5. Steam cook the same for 2-3 mins. (In idli pot or in a kadai by just placing a stand inside with water) 



6. After the plate cools down, remove with the help of a sharp spoon. 




Ready to eat!!!!!
